CARNE IN GALERA

A traditional, tasty and aromatic beef stew, made with abundant sage and rosemary. Best served with its sauce. 
Ingredients: beef, extra virgin olive oil, red wine vinegar, sage, rosemary, salt, black pepper..

LA FRANCESINA

Boiled beef, stewed with onion and vegetables, as Florentine tradition dictates. Just heat and enjoy.

MAGNIFICAT

Beef sauce prepared according to a time-honored recipe, enlivened by a good dose of sweet paprika. Heat and serve on fresh or toasted bread, or over pasta.

PEPOSO

Peposo is beef stew that spends an entire night braising with black pepper, garlic, sea salt, red wine and nothing else, in the magic of a hot oven. It is ready to go, just heat and ladle into a bowl over a hearty slice of toasted bread. The wine, red of course, must be ready in your glass, awaiting its turn.
Ingredients: beef, red wine, salt, garlic, black pepper.

PALLE DE' MEDICI

Strictly six balls per jar, as per the Medici coat of arms. These meatballs are fried, then simmered Livornese-style, that is, in a garlic and tomato sauce. Once reheated, they are known to cause deep physical enjoyment. 
Ingredients: ground beef and ground pork, onion, egg, tomato sauce, salt, garlic, black pepper, extra virgin olive oil.

TONNO DEL CHIANTI

Perhaps my best-known recipe. Pork leg and shoulder, deboned, salted and then boiled in white wine. Just drain, pull it into shreds with your hands, and season with extra virgin olive oil. Excellent over a bed of Tuscan beans, or with chickpeas, onion, tomato, capers ... 
Ingredients: pork, salt, white wine, sunflower oil, bay leaf.

SUGO ALL'USO DI CACCIA

A meat sauce made following the ancient tradition of simmering meat (beef in this case) with bay leaves, juniper berries, red wine and vin santo, in the same way that wild game has always been prepared in Tuscany. 
Ingredients: ground beef, onion, red wine, carrot, extra virgin olive oil, vin santo, Chianti herb salt, juniper berry, bay leaf, rosemary, Tuscan spice mix.

SUPER BRODO

Beef and pork plus bones, slow-simmered, then defatted. Very concentrated. It is delicious diluted with water for your needs or, to prepare a CECCHINI MARTINI mix six parts of broth, three parts Gin, and one part lemon juice. Shaken, not stirred.
 Ingredients: water, beef, pork, onion, Chianti herb salt.
